To celebrate the start of the year 2024 with a gourmet touch, the ever-imaginative Pastry Chef has created a brand-new, limited-edition galette des rois forEpiphany 2024.
This galette is distinguished by its double puff pastry, guaranteeing a texture that's crisp on the outside and melt-in-the-mouth on the inside. When cut, it reveals a savory frangipane made from hazelnut powder, enhanced with hints ofamaretto, rum and vanilla. Its heart contains three layers of pure pleasure: an exquisite praline, a creamy caramel, and a hazelnut paste embellished with whole caramelized hazelnuts.
This year, the Chef reinterprets the emblematic galette, combining tradition and elegance, inspired by the typically French texture of croissant dough and the hazelnut, the true star of this creation, declined in several textures.
When questioned, Maxence reveals that he has come back to a gourmet version with caramel, a best of that we liked so much two years ago and which is back in an exquisite version. In any case, it's one of our favorites of this year. Admittedly, it's not cheap, but if you're looking for La galette au feuilletage de folie, with different textures and a taste of home, you've come to the right place.
This 2024 galette des Rois, designed by Maxence Barbot for the Shangri-La , is available for pre-order as a limited edition from January 1, 2024. It is then available to take away from 10am to 8pm at the Bauhinia restaurant. It costs €72 for 6 people.
