A staple of French cuisine, the galette bretonne, also known as the buckwheat galette or galette de sarrasin, is, as its name suggests, originally from Brittany. Unlike the crêpe de froment, made from wheat flour, the galette bretonne is made from a dough of buckwheat flour, water and salt. It is then rolled out into a thin pancake on a hot griddle, commonly known as a bilig.
Then it's time to get creative, as just about every imaginable ingredient can be slipped into a buckwheat pancake, whether it's ham, egg and cheese for a complete pancake; andouille de Guémené and candied onions for the more adventurous; or roasted apples and camembert for those with a sweet-and-sour taste.
And for dessert, buckwheat galettes can be enjoyed in a sweet version, topped with a drizzle of lemon, a few grains of sugar, spread, or roasted pears, salted butter caramel and chantilly for real gourmands. Just one galette and so many ways to enjoy it!
A simple, comfortingfamily dish, galettes can be enjoyed in Paris' s many crêperies , so if you're craving Breton galettes, don't delay in discovering our top addresses for devouring them in the capital. All accompanied by a bowl of cider, of course!
