The galette des rois is a serious business, andAtelier P1, a favorite bakery in Paris's 18th arrondissement , won't tell us otherwise. In the words of its founder, Julien Cantenot: "Epiphany is the most convivial time of the year, when everyone joins in the fun and excitement. So, to accompany gourmands in these beautiful moments of sharing, each yearAtelier P1 offers a galette des rois designed for purists who prefer the traditional recipe with classic almond frangipane.
But beware: traditional galettes don't necessarily mean classic! And this recipe, which earned them the title of best galette de France 2022 on the TV show TTBON, is the fruit of a seemingly simple but effective equation: the right products and the right gestures make a good galette. And so, for Epiphany, we have a galette whose ingredients are rigorously selected: organic AOP (Appellation d'Origine Contrôlée) Lescure butter, flour from Moulins Bourgeois, whole almond powder, organic eggs... as you'll have gathered, here we have organic at every level!
As for the right gestures, they are reflected in the airy, inverted puff pastry, which provides a satisfying crunch that contrasts with the softness of the gourmet frangipane, cleverly enhanced by amber rum from Réunion Island, bringing out the regressive sweetness of the almond. " We're very proud of the recipe, it's as much a part of our identity as our baguette square," says Julien. We can see why!
For those who still want to get off the beaten track this Epiphany 2024,Atelier P1 also offers an original recipe with pistachio and orange blossom on a base of almond frangipane married to 100% pistachio dough. We love its crumpled, crisp filo pastry decoration, sprinkled with crushed pistachios. When tasted, the combination of almond frangipane and pistachio is good without being too heavy, making it a great discovery for those who want a change, but not too much.
Finally, in individual format, there's the classic recipe as well as a creation with gianduja praline and lemon zest that should appeal to chocoholics.
For all these recipes, we recommend that you place your galette in the oven at 160°C for 5 minutes, before serving it warm. As for the beans, they are made by Caroline Schwab, a French ceramist who has designed creations for Atelier P1 that can be reused as pendants.
