Looking for new pastry flavors? Look no further! A new pastry shop that revisits the great classics of French pastry with Mediterranean and Middle Eastern flavors has just opened its doors in the 6th district of the capital.
Named Tipana, this new pastry shop is the work of Dima Al Husseini and is part of this trend of fusion between the great French pastry tradition and sunny flavors from the Maghreb and the Middle East, such as fig, date, pistachio, orange blossom. "For me, French pastry combines demanding technicality and ultimate refinement. The idea of Tipana is to perpetuate this French tradition by adding a touch of Mediterranean flavors" explains the founder.
On the menu of this new pastry shop in Saint-Germain-des-Prés, you can discover individual cakes and cakes to share, reinterpreted around typical flavors of the Maghreb and the Middle East, such as the Blida tart, a lemon tart with clementine zest and a meringue flavored with rose water; the Mediterranean éclair which combines pistachio and dates; or the El Oued pastry which uses the codes of the charlotte with dates.
But here, the flagship product is the Tipana, an almond cookie filled with a mousseline cream in individual or shared versions. Made from almonds and gluten-free, the dacquoise plays with colors and flavors: praline-hazelnut, cocoa, coffee, lemon, pistachio, orange blossom or raspberry-rosewater.
In addition, Tipana invites you to indulge at any time of day: in the morning with granola, baghrirs served with honey, flaked almonds and fresh cream, or the Algerian version of pancakes; and at lunchtime with salads filled with flavors that make you travel, eggs in several forms, and of course the inevitable oriental chakchouka.
Finally, Tipana offers a selection of gourmet teas flavored with dates, peppermint, rose or orange blossom; but also chocolates, nougats, caramels and other shortbread to take away .
