Alert to lovers of cocoa and especially of good chocolate, Jade Genin has opened her first store in Paris, in her name. A chocolate shop that takes place on the mythical Avenue de l'Opéra, overlooking the emblematic monument of theOpera Garnier, which was once called the wedding cake.
It is therefore at 33 Avenue de l'Opéra, near Cédric Grolet's patisserie-tea room, that one can now go to taste Jade Génin's creations. She wanted a store in the center of Paris, far from her father's stores, to mark her independence.
At first glance, Jade Genin was seduced by the façade of the place. The interior is not to be outdone and the crossing location, overlooking the workshop on rue Danielle-Casanova, convinced her. The workshop, which is open to the view of strollers, is connected to the store by a curved corridor, one drawing the horizon of the other. One can thus discover the craftsmen at work, a little like backstage before the performance in the store.
For her boutique, she teamed up with designer Khaled Kolsi to create a place whose primary goal was to respect the raw material of chocolate: its magic. White and gold await you in this place inspired by the Taj Mahal and ice skating, two passions for Jade.
For Jade, chocolate is not a material like any other:"When I work with chocolate, I have no notion of time passing. I forget everything, fears or regrets, the appearance or futility... I abandon myself to it, completely absorbed... With chocolate, everything that constitutes me is occupied. Hands, mind and senses bend over its birth."
Fascinated by its gifts of metamorphosis, she never ceases to observe it, from liquid to solid, from dull to shiny, playing with temperatures and reflections... " Maybe I understand him because he is like me and Willy Wonka : confusing and difficult to tame! But rigorous in its madness. The chocolate can go from hard as a rock to soft as a rock. Honestly, apart from him, who is capable of that?
So, a question arises: what does Jade Genin offer us in her chocolate factory? We find Paris in chocolate. We have chocolates that take the shape of the obelisk of the Concorde and the Pyramid of the Louvre. The chocolate candies form pyramids whose faces reflect the light, with a beautiful shine, synonymous with good chocolates. A shape that she particularly appreciates and that reminds her of a creation of her father in the shape of the Louvre Pyramid that had marked her in her youth.
For her chocolate bonbons, she uses chocolate from Xoco Gourmet, a producer and roaster of exceptional chocolate that can only be found in a few kitchens in Paris: Mayan Red, from Honduras, has a taste of red fruits that is both full-bodied and fruity. A chocolate that she blends with Valrhona to soften the whole and not mask the taste of ganaches.
And speaking of ganaches, note that these are real little flavor bombs that await you. Made without dairy products, the juice-based fruit ganaches, which change texture according to the flavors, reveal all their flavors without masking. We highly recommend the lemon, whose zest is incredibly present. We also liked the ginger version, the almond praline with green spices (anise and fennel) and the Tahitian vanilla.
For Christmas, let yourself be tempted by the sublime boxes that allow you to discover beautiful flavors such as the chocolate cones of fir which transports us to the forest. Count 15€ for a box of 15 pyramidions, 36€ for 45 and 65€ for 90 chocolates.
Also on the program are gourmet rochers, praline crocodiles, low-sugar marrons glacés, small bars of dark or milk chocolate, and an oleaginous-free barley praline-based spread.
Obviously, like his father, here, we advocate quality and sincerity above all. The colorings are all natural and we forget about additives, preservatives, artificial flavors and flavor enhancers that will not pass the door of the workshop. At Jade Genin, we do not want to alter the quality of the product. Like her father, she advocates respect for the product, but infuses it with her own universe and tastes. From candies infused with Asian spices to chocolates and floral scents from the Orient, we have not finished making our taste buds travel.
