Pastry chef Olivier Stehly launches his new all-you-can-eat brunch at his Fabrique à Toga in Bercy Village. With Viennoiseries, eggs cooked to order, risotto, coquillettes with truffles, lasagne, quiches and homemade pastries, the chef is sure to delight us with his all-you-can-eat formula for less than 35 euros! Word of mouth is so good that it's sold out on Sundays, and the chef is even considering opening his brunch on Saturdays. We tell you all about it.

After trying his luck in Châtelet-les-Halles, Olivier Stehly has found a place for himself in the Cour Saint-Emilion. His spacious, well-appointed Fabrique à Toga has a charm that promises gourmet meals just like at home. Opened in the midst of the health crisis, in March 2021, it has found its audience with Sugar Hero pastries and gourmet, comforting dishes. At the opening, we tasted Olivier Stehly's coquillettes with truffles and mashed sausage, and heard him promise us a gourmet brunch! Here we are, July 2021.

On Sundays, from 11 a.m. to 3 p.m., tasty dishes invade the large kitchen counter. A corner for viennoiseries, a corner for a few cheeses (whose choice could be improved), a corner for pastries and a corner for salads and gourmet dishes. On this particular day, lasagne, coquillettes with truffles, croques-monsieur and bagels were available, so that every member of the family could find something to his or her liking. And the must: eggs cooked to order, with a choice of a fine omelette, scrambled eggs or a soft-boiled egg, topped with vegetables, salmon and/or charcuterie from the stand.

To please the eye, we set up a large table. The chef has fun and follows our lead. We share the meal with serving spoons and a plate each. This allows us to taste a little of everything, without having to make 10 trips to the stand. Our favorites are the risotto, which is as creamy as you could wish for, and the scrambled eggs, which are frothy and can be eaten in a single bite. Of course, the brunch ends with the chef's signature desserts in mini format.

The big plus of this brunch is its price, less than 35 euros. As a result, the 35-person dining room is fully booked every Sunday, with groups of friends reserving tables for 8, families coming in without a problem, and brave souls trying out the terrace.

PS: we didn't tell you, but there's even a pinball machine where you can play all the games of your childhood.
In other words, brunch can go on forever!
