From July 31 to August 4, 2023, the Fulgurances l'Adresse restaurant will be welcoming Jean Covillault, an engaging contestant from the latest season of Top Chef! For several years now, the young chef has been drawing inspiration from his native Auvergne region, in the spirit of an innkeeper. All the more reason why Sophie Cornibert, Hugo Hivernat and Rebecca Asthalter decided to entrust him with this summer residency at their restaurant in the 11th arrondissement.
Jean Covillault discovered his passion for cooking during long family meals. After training at the Auberge Basque and the Institut Paul Bocuse, his first position as chef de partie took him to the Intercontinental Estoril restaurant in Portugal, then to the QO Amsterdam hotel in the Netherlands and the Crowne Plaza in Neuilly, where he rose through the ranks to become junior sous-chef.
In 2020, Jean became Executive Chef at the boutique hotel Le Belleval in Paris, giving him total freedom to assert his generous, seasonal cuisine, before his enthusiasm and authenticity were duly noticed by viewers three years later in the final season of Top Chef.
For his summer table at Fulgurances, open Monday to Friday for dinner and Wednesday to Friday for lunch, Jean imagines dishes inspired by his native Auvergne. In the evening, a unique menu (55€): antipasti revisited in his own sauce, an ultra-melting and crispy potato cake, grilled meat and, for those with a sweet tooth, a grilled pâté en croûte.
Jean Covillault doesn't leave out the plate of raw-milk French cheeses, and the dessert will of course be comforting and deliciously summery. For lunch, the young chef offers a simpler, more affordable menu (€32) featuring summer vegetables.
