A small terrace, two adjoining rooms and, above all, a large kitchen surrounded by glass: this is what 21G Dumpling looks like, the address opened by Clément, a former salesman and fan of Chinese specialties. It took him two years to design the whole project, discuss recipes with expert cooks and find the identity of a place between simplicity, tradition and sophistication.
The simplicity is in the clean, clear and relaxing decor. The tradition is in the recipes of Xiao Long Bao (delicious steamed ravioli made with broth and stuffing with pork, chicken or shrimps), Zheng Jiao (vegetarian steamed ravioli, for the eco-friendly friends), or Guo Tie (grilled ravioli with farm chicken and crispy lace, elegant and delicious).
Finally, sophistication is found in the desserts, little hybrid things that bring together the French pastry tradition with popular Chinese recipes. We find a Mooncake made of chocolate mousse, a peanut éclair and a pineapple Bolo Bao.
The portions are inspired by tapas and are easily shared with friends or couples. We pick up a ravioli here, a pinch of shrimp rice there, a piece of pak-choi (green vegetable served with a garlic and soy sauce, sublime!) while drinking a sip of organic iced tea...
In short, we would become regulars of the place!
