To celebrate the arrival of spring, Jérôme Banctel, Executive Chef of La Réserve Paris' La Pagode de Cos restaurant, has created a new menu.
The menu features seasonal produce, to which he adds his usual touch of originality!
In fact, the chef meticulously selects local produce to which he takes the liberty of adding creative notes that may surprise, but are so successful!
For starters, try langoustine ravioli with coriander vinaigrette (48€), Caesar salad with crispy Périgord poultry and parmesan (38€), or green beans and crab with sesame sauce (41€).
Continue with mackerel from Brittany with green apple jelly and yuzu Kosho, foie gras lacquered with caramelized daikon turnip or simply with ham and truffle coquillettes.
And why not finish with a plate from Master Cheesemaker Éric Lefebvre, MOF.
