A Michelin-starred establishment since 2006, offering"modernized traditional cuisine in a simple, uncluttered setting". In 1969, after graduating from the hotel school in La Rochelle, he was quickly spotted by Joël Robuchon, with whom he helped open the Concorde La Fayette, before becoming head chef of the Jamin restaurant in 1978. In 1981, he took charge of the kitchens at La Tour d'Argent, before opening a franchise in Japan a few years later. In 1997, he became Executive Chef of theHôtel de Crillon, and in 2004 opened his own restaurant.
For starters, you can opt for an artichoke heart fondant with Miso, delight in foie gras marinated in sake, or marvel at a scallop carpaccio with mango, beet, Granny Smith, truffle and dill. For main courses, you can indulge in a lobster Parmentier or a fillet of hind with redcurrant jelly pepper sauce, and for dessert, you're spoilt for choice: Fuji Oil soy milk tart, MontBlanc, Reims cookie hot soufflé with Grand Marnier, Norwegian omelette revisited... the possibilities are endless for gourmets and gourmands alike.
