If you're visiting the 7th arrondissement, why not drop by the5-star Le Cinq Codet hotel to discover Chiquette, the restaurant that's just opened its doors.
Why Chiquette? For the novel La Petite Chiquette written by Louis Codet, a tribute wished by the new chef, David Maroleau .
Having worked in such fine kitchens as the George V, the Ritz, the Lancaster and Maison Troisgros, as well as the Four Seasons in Palm Beach, David Maroleau came back with a desire for cosmopolitan cuisine, which is reflected in the menu at Chiquette.
At Chiquette, there's no menu, just a menu brimming with dishes that evolve with the seasons and the chef's whims.
At the moment, for example, there are some fine Asian-inspired dishes, such as organic prawns in semi-cooked tartar, Koshi Hikari rice and lemongrass broth (34€) and snacked scallops with wakame butter, red curry and coral marinière, crispy vermicelli (32€), two dishes we particularly enjoyed.
We also tried the pig, cooked for several hours and perfectly confit and caramelized à la Char Siu (soy, rosewater, honey), accompanied by Thai aranccini and bok choï (28€), and another very interesting dish: an excellent unctuous Jerusalem artichoke cream, to be enjoyed with smoked Jerusalem artichoke chips, just before the pan-fried foie gras, glazed à la Périgueux (24€), smoked and brought to our table under cloche.
For dessert, simple but gourmet proposals around coconut, chocolate or Corsican clementine (14€). We were personally tempted by the latter option. Clementine sorbet spiced up with Kalamansi and candied ginger, opaline with pink berries, a fresh and tangy dessert, perfect to end this lovely meal.
If these dishes are your dream, don't delay in trying them. The menu is renewed every 6 weeks, and it would be a shame to miss out!
