You've already heard of the Table du Recho, the solidarity restaurant in the 16th arrondissement of Paris, now discover the association's new address: the BAL Café par le Recho, housed in the BAL showroom in the capital's 18th arrondissement. A new address to "restore the world by restoring people", in Le Recho's own words!
Faithful to Le Recho's project linking cuisine to hospitality and unconditional welcome, BAL Café par Le Recho has become an integration restaurant for refugees wishing to learn how to cook ethically and militantly.
On the menu, market cuisine, concocted from organic, farm-grown and local produce, the fruit of the labor of committed men and women. The kitchen, too, is committed to the environment, and strives to drastically reduce its carbon footprint by giving pride of place to plant-based ingredients and significantly reducing and recycling waste.
Pending the arrival of the future chef who will be making his debut in the kitchen next fall, from June to September, Le BAL par Le Recho will be offering two- to three-week residencies to talented young chefs selected by the La Relève agency. Each chef will have carte blanche to let his or her desires speak for themselves and try their hand at running a restaurant, supported by the restaurant's brigade, made up of refugee cooks on integration schemes.
The first residency, from June 2 to 12, 2022, will go to Toko Essom, a young chef of Cameroonian origin who has worked at the Prince of Wales and the Plaza Athénée, and who draws inspiration from his travels to offer a cuisine of world flavors, always in tune with the rhythm of the seasons. He will be in the kitchen at BAL Café for two weeks, accompanied by Hashmat, a chef of Afghan origin who has been working at Recho for almost a year.
