While the capital welcomes new culinary projects every year, some addresses are more eagerly awaited than others. Such is the case with Minore. Behind this spot, combining restaurant and cocktail bar, is the now-famous Japanese chef Katsuaki Okiyama.
Having cut his teeth in the kitchens of Robuchon, Taillevent and Agapé Bistrot, Katsuaki Okiyama decided to take on a new challenge. The chef opened his first establishment, Abri, in September 2012, awarded a first star in 2019, followed by Abri Soba. While Abri closed its doors for good in autumn 2022, Abri Soba continues to delight the capital's many gourmands. And Katsuaki Okiyama has no shortage of ideas for the future, announcing the forthcoming opening of Minore, in association with bartender Hugo Combe, a former member of the Classique bar (9th).
Together, Katsuaki Okiyama and Hugo Combe have imagined a place combining restaurant and cocktail bar, with a relaxed atmosphere. As posted on Minore's Instagram page, the place will offer 22 seats (reservations required) to enjoy Katsuaki Okiyama's signature menu, and 12 stools at the counter to sip Hugo's clever brews.
So, when will it be possible to push open Minore 's doors? As yet, the venue has not announced an official opening date, but the spot is expected to open in early 2024. Once open, Minore will be located at No. 4 avenue Trudaine, in the 9th arrondissement of Paris.
