Yannick Alléno has been passionate about Japanese gastronomy for 30 years (you only have to walk past L'Abysse, his 2* sushi counter at the Pavillon Ledoyen, to realize this), and is now opening a second Japanese address in Paris, this time in the form of izakaya, the famous Japanese-style tapas bar.
In the heart of Beaupassage, in place of his charming summer address Moët in Paris by Allénos, the multi-starred chef opens this new restaurant called L'Izakaya Dassai. In a traditional Japanese izakaya atmosphere, L'Izakaya Dassai aims to bring the conviviality of these popular Japanese tables, true places for living and sharing with friends in Japan.
"I want to share another facet of Japanese culture and the art of living with L'Izakaya Dassai. It 's a simple, friendly place where friends can meet to share traditional dishes that reveal the richness of the products and flavours of a culture that never ceases to surprise and amaze me," says chef Yannick Alléno.
To achieve this, the chef has imagined a multitude of dishes, his Japanese favorites, to be washed down with exceptional sakes from Maison Dassai: yellowtail sashimi with ponzu sauce, half-cooked beef tataki marinated in shiso, fried chicken karaage from a family recipe, ramen, teriyaki chicken grilled with binchotan or pork katsudon.
Great Japanese classics with the touch of a great chef behind them, we say yes! L'Izakaya Dassai also unveils some lesser-known specialties, such as oyakodon, traditionally a bowl of rice topped with egg and chicken, here reinterpreted with thinly sliced trout and fish roe; tsukemono, crunchy pickles made from seasonal vegetables; or black cod, a fish cooked in a miso and sake marinade, according to the ancestral Japanese preservation method.
