Between land, sea and plants, L'Atelier d'André restaurant is nestled on Paris's Left Bank.

The Left Bank, and more specifically the Saint-Michel district, welcomes a new restaurant in the New Year. Under the aegis of the Spectr group(La Brasserie des Arts), L'Atelier d'André is the brainchild of entrepreneur Jérémy Quélin, art curator Joséphine Fossey and chef Yohann Clotz, who have imagined a place where gastronomy, oenology and art meet.

Named in homage to André Breton, leader of the Surrealists, L'Atelier d'André boasts an intimate, theatrical ambience: marble mosaic floor, travertine bar, wine library, wood panelling, lighting by Sabine Charoy, and numerous nods to Surrealism.

In the kitchen, the former Apicius and Cristal Room Baccarat chef imagines a French cuisine that honors the terroir of France, relying on carefully sourced, seasonal produce- vegetables from market gardeners, selected meats, fish from small fisheries.

Inspired as much by the land as by the sea and plant life, Yohann Clotz 's colorful dishes are an ode to raw ingredients, such as snacked red mullet, fennel and pastis fish juice, scallops cooked in shell, Jerusalem artichoke and zaatar, AAA Averyon lamb, salicornia and parsnip purée, or pink button mushrooms and soy-flavored egg confit.

All of this can be enjoyed, accompanied by a fine wine list, as part of a lunch or dinner tasting menu.
