French pastry world keeps on standing out across the world. Tuesday June 11, 2019, Jessica Préalpato, pastry chef at Alain Ducasse au Plaza Athénée in Paris, has been named recipient of the World’s Best Pastry Chef 2019.
She follows other great names of the pastry such as Cédric Grolet, winner 2018, Dominique Ansel, winner 2017 and Pierre Hermé, winner 2016.
Following this very beautiful honor, Jessica Préalpato didn’t take long to speak: “It’s an absolute honor to be recognized The World’s Best Pastry Chef by World’s Best Restaurants. As the daughter of two pastry chefs, I have been immersed in the world of culinary arts my entire life. This award represents my life journey and the passion I have for this art. I hope this award inspires emerging pastry chefs around the world” she said.
After starting her career at La Chèvre d’Or in Eze (Alpes Maritimes) under the direction of chef Philippe Labbé, Jessica Préalpato joins Frédéric Vardon’s team for the opening of the 39V in Paris before working at Park Hyatt Paris-Vendôme. Jessica Préalpato multiplies experiences abroad (Dubai, Tokyo, Beirut and Saint-Petersburg) as the pastry chef for Corfou group. It’s in November 2015 that Jessica Préalpato joins Alain Ducasse au Plaza Athénée team as the pastry chef.
Her signature desserts? Strawberry clafoutis with frosted pine and Millason cake (a traditional cake from South-West) and her famous “figue” based on figs cooked three ways and served with fig tree leaf ice cream and a light cookie.
For the record, the prize is the result of votes by World’s Best 50 Restaurants Academy, a panel of international experts equally including over 500 women whether they’re chefs, gourmet journalists or cosmopolite foodies.
