Yann Couvreur, the young pastry chef we love so much, who has worked in great restaurants such as the Park Hyatt, the Burgundy or the Prince of Wales, continues his ascent and opens a second pastry shop on rue des Rosiers, just a stone's throw from Saint Paul and the Place de l'Hôtel de Ville.
A new spot that will give pride of place to take-away products. Indeed, it is not less than 4 points of sale which opens in this store all in length. We start with the pastry section on the left, which offers the famous Kouign-Amann and other brioches rolled by the chef. On the left, a window displays fresh salads, fresh juices, gazpachos, fruit salads and desserts with a spoon. There is also a nice selection of teas and coffees to take away or to eat in. It is the ideal corner for the passage of the breakfast.
Then we continue with the middle window which presents all the pastries of the moment of the chef. There are the famous rectangular eclairs, the sublimely delicious lemon tart, the famous Merveille au Praliné, but also some new ones like the light apricot cheesecake, the pistachio-cherry Merveille or the Baba au pêches. Real killers that you will have to taste expressly because they are so good.
In front of the counter, some seats are waiting for you along the window. You can also choose to sit on the few seats on the terrace in front of the shop window, which overlooks the pedestrian street.
From the store as well as from the outside, you can see the cooking and the realization of our delicacies. On the right of the store, we discover 2 take-away counters. In this pastry shop, the street food is in the honor. Knowing that the rue des Rosiers is well known to be the fief of falafels to take away, it is not surprising that Yann Couvreur decided to bet on this practice.
Accustomed to making minute desserts, he puts the emphasis in this new place on his famous "fugues", his desserts assembled on demand. So, no more need to wait in line like the others, you just order and go. Vanilla millefeuilles, fruity pavlovas and other desserts of the moment are waiting for you, a nice change from the usual pancakes or waffles.
On the left, the second take-away counter opens onto another novelty, homemade ice creams and sorbets! Strawberry-verbena, chocolate-salt flower, lime-mint or mango-coriander are among the seasonal flavors you will find. And yes, in this new place, you can enjoy gourmet and homemade ice creams, imagined by the chef.
