Lovers of sweet treats and healthy dishes, you'll find everything you love and more in the brunch that Foucade has just launched at its brand-new Marais address .
For a number of years now, Foucade has set itself the challenge of offering pastries made from unrefined, nutrient-rich ingredients, natural sugars, gluten-free ancient flours, with fewer allergens, no animal gelatin, no artificial agents and with seasonal, fresh, minimally processed produce.
So it's only natural that the brunch offered by Foucade every Saturday and Sunday morning at this new address on Rue de Bretagne is perfectly healthy , yet very gourmet.
Two formulas are available: a 100% healthy formula (28€), and a slightly more gourmet formula (32€), complete with pastries made in Foucade.
Gourmets are invited to choose a hot drink (tea, coffee, latte with plant-based milk) and a fresh fruit juice. Would you prefer a multi-vitamin orange/carrot/ginger juice or a green detox apple/kale/mint juice?
Then there's the surprise basket, made up of a chocolate/coconut mikado, a hazelnut/almond/mil cereal cake, a madeleine and a raw cocoa/nut cake. Or would you prefer a homemade granola with fromage blanc and fresh fruit?
What's more, at Foucade, you can choose between three different granolas: a classic granola, a raw cocoa granola or a coconut/banana granola. We personally chose the latter, and it was delicious.
Then it's the turn of the savory dishes: a quiche, avocado toast on a bed of vegan cheese (soy-based) and amazing savory pancakes, accompanied by butternut squash, yellow bell pepper, sautéed zucchini, topped with agave syrup for an interesting little touch of salty sweetness.
Savoury dishes are served with a refreshing quinoa/carrot/cucumber/red bean/yellow bell pepper salad.
Finally, the long-awaited moment arrives for gourmands who have opted for the most complete brunch formula: the choice of pastries created by pastry chef Saori Odoi and brand founder Marjorie Fourcade, in the pretty display case. Chou pommes/praliné, Soyeux coco/poire, Opérette menthe, Roulé Kabocha, Fruitée fruits noirs... We've got our eye on them all!
We fell for an excellent fig tartlet (fig and rosemary compote, rosemary-vegetable custard, roasted figs) and two medium-sized pastries: a mint operetta and a fruitée fruits noirs. Perfect for ending brunch on a sweet note.
Foucade's brunch is for all those who like to take care of their bodies; but we also recommend it to those who still haven't understood that a healthy, vegetarian-oriented brunch is not at all a sign of boredom. Quite the contrary, in fact!
