La Parade is the dining cellar in the 11th arrondissement that delighted us when it opened last year. In the kitchen, chefs take it in turns to offer a variety of gourmet residencies. After Aldwin Beets, formerly of l'Arpège and Executive Chef of Deviant, and the duo Charlotte Drouhin and William Denys, formerly of Tannat, it's Priscilla Trâm 's turn to set up shop for a new 3-month pop-up called The Last-Dance .
To celebrate this new residency, chef Priscilla Trâm and food youtuber Mama Ly are organizing a 4-hand brunch on Saturday, November 20, in the tradition of Yum Cha, the traditional Cantonese brunch . An invitation to discover the creative world of these two young chefs, over lunch.
On the program, in the pure tradition of Yum Cha: a 6-course menu of Asian dishes reworked according to their inspirations: Egg drop corn soup; bao viet style chicken sausage lao egg and shitake; fried sea bream ravioli and Chinese cabbage; steamed rice pancakes and baby vegetables; pork belly pak Choy, and to finish, condensed milk pearls and clementines!
