La Parade, the 11th arrondissement's wine and food cellar - Definitely closed

Slate-style dishes at lunchtime, plates to share in the evening, weekend brunch, wine cellar, cocktail bar... La Parade, which has just opened its doors in the 11th arrondissement, has a lot to offer.

Just a stone's throw from the Goncourt metro station, La Parade has just opened, a new dining cellar that's sure to get taste buds tingling in the 11th arrondissement.

Heading up the kitchen is young chef Aldwin Beets, who has worked with Alain Passard, Alain Ducasse and Guy Savoy. Suffice to say, you're in good hands!

At La Parade, the cuisine is healthy, organic, plant-based and market-driven, with Mediterranean inspirations and vegetables in all their forms. At lunchtime, you can choose what you fancy from the menu. And in the evening, the restaurant opens up to more conviviality with plates to share with the table.

As for drinks, sommelier Raphaëlle Campion is in charge of presenting the natural wine list, while mixologist Anthony Zamora lets his imagination run wild behind the bar, where you can sit back and enjoy a drink.

During our visit, we let the chef guide us with our eyes closed, and we weren't disappointed. In 5 plates to share, he managed to show us all his mastery of the subject and his love for vegetables - which are indeed at the center of the plates!

Our favorite of the dinner: leeks with old-fashioned vinaigrette and a siphon of light mayonnaise, tangy with shallots and capers (10€); a marvel.

This is followed by scallops marinated in lemon with pickled daikon (13€), tender and punchy, heliantis (a close cousin of Jerusalem artichoke; 10€) cooked in milk and lemongrass and surprisingly paired with Sicilian anchovies; sea bream fillet (16€) on a bed of hummus, delicately hidden under a mizuna salad, and finally celery (10€), served whole, halved and covered with fish roe and a surprising black sesame paste.

Chef Aldwin Beets is also in charge of desserts, and we choose not to choose: it'll be both! On one side of the table, the mille-feuille (10€), crème montée and lemon sorbet, with mint, basil and coriander to liven things up (even if it looks more like spinach); on the other, the pavlova with blood orange and Piedmont hazelnut (10€), pretty and tasty.
