Lovers of fine meats have a new spot to sink their teeth into: Carni! Sébastien Daver and Nicolas Barbier, already at the helm of L'Épuisette, a fish and seafood restaurant, are opening their second table, Carni, an establishment dedicated to meat, still in the 9th arrondissement, a stone's throw from their first business.
Like L'Épuisette, Carni offers tapas (seasonal and recurring) on its evening menu, as well as cuts of meat to share. Mature rib-eye steak, rib-eye steak, lamb shoulder, falafel chorizo bellota, duck rillettes, chicken nuggets, bean tempura, sweetbreads, lamb tataki, rabbit saddle ballotine... There's something for every taste and taste bud, and it's all sustainable too!
Note also that while Carni 's cellar is mainly stocked with red wines to accompany meat and charcuterie, it also has a selection of whites and rosés, mostly natural or organic wines, as well as a rather original cocktail list (11€).
For lunch, Carni offers three affordable formulas - 15, 18 and 21€. Lunch dishes include bavette "normande" with shallot sauce, caramelized ribs with barbecue sauce and poultry supreme with peppery cream. At dinnertime, choose from a menu of tapas and meats to share. The house specialty? The marrow bone, to be enjoyed without moderation!
A marrow bone that the editors were able to discover, along with part of the lunch menu and another part of the dinner menu. The latter is particularly tasty, served with a Thai-style tartar knife. We were also tempted by the rabbit ballotine, chorizo bellota falafel and bean tempura. Three tapas of rare finesse, with flavors as surprising as they are interesting, but above all consistent both within the same dish and between the other tapas, bringing real added value to the whole.
As for the lunch menu, we opted for the chicken supreme with carrot purée on the side. The meat is ultra-tender, and the carrot purée, with Timut pepper, is a real treat! The marriage of carrots and pepper is surprising, a culinary masterstroke for all lovers of fine flavors. On the wine side, a tasty Côte du Rhône from the house's fine list of natural wines. And on the dessert side, roasted cherries with honey, vanilla white chocolate ganache and hibiscus meringue are sure to delight the taste buds!
A favorite restaurant for all meat lovers, but not only! Value for money is excellent: expect to pay between 7 and 16 euros for tapas, with portions that are neither too greedy nor too small. Add to this the finesse of all the dishes and you've got a great promise that would be a real shame to miss.
