Paris is a cosmopolitan city: from Greek gastronomy toAsian specialties andSouth American flavors, there's something for every palate! With such a melting pot of cultures, cooking pros inevitably want to try out new combinations, mixing recipes from different countries. And these gambles are sometimes very successful! Such is the case with mochi-waffle, Koya's signature snack .
This chain, located not far from the Madeleine and the Grands Boulevards, delights us with its Moffles, waffles made from glutinous rice flour. The delicate taste of mochi in a familiar format.
Koya offers a varied menu, with different waffles and hot and cold drinks, all at very reasonable prices. Count on €5 for a plain Moffle, and up to €7.50 for a Moffle tiramisu with seasonal fruits. Drinks include the traditional bubble tea with black tea or dalgona (a Korean sugar candy). Seasonal fruit teas, lemonade, coffee and lattes of all kinds are also available. These sweet treats can be enjoyed to take away, on the store's small terrace, or indoors, in a warm and colorful setting.
We tried the Moffle with maple syrup, accompanied by hibiscus peach tea (served cold, due to the current heatwave ) and the Moffle tiramisu matcha, the store's big star, with dalgona bubble tea and tapioca pearls. The plates didn't stay full for long.
These Moffles were more than approved by the editors. The texture of the waffle, crisp on the outside and soft on the inside, and the light taste of the mochi combine perfectly. The whipped cream and matcha have a strong presence on the palate, without being overpowering. The whole thing isn't too sweet, making it a pleasure to indulge without regret. The maple syrup moffle is also well balanced.
The drinks are also a great success. The bubble tea with dalgona gives us the sweet taste of the candy we love, with a dose of sugar that's always perfectly controlled. The flavors are well-balanced, and you can drink without the aromas fading in the face of the waffle. The hibiscus tea is just as delicious. The taste is strong enough not to be completely diluted by the melting ice cubes. Yet here again, the drink's flavors don't get in the way of those of the Moffle.
Koya is a good address to try out as soon as possible, and to try out again each season, to discover the ephemeral recipes of the moment!
