Discovered by the general public thanks to his participation in the 2023 edition of Top Chef, Jean Covillault takes up residence from February 12 to April 12, 2024 at Court-Bouillon, an ephemeral restaurant in the 17th arrondissement of Paris. Originally from the Auvergne region of France, Jean Covillault will be paying homage to his native region with a simple terroir cuisine - a little too simple, in our humble opinion.
On the menu are the classics of French cuisine, revisited in the sauce of the Auvergne chef, who is as much behind the stove as at the table. A first step for this young chef, who passed through the Belleval, who is gradually taking off in the culinary world.
Open for dinner only from Tuesday to Friday, the 20-seat restaurant offers two menus at €25 and €30. The short menu features 3 starters, 3 main courses, cheese and 3 desserts, all of which change according to market arrivals and returns. To accompany all this, Jean Covillault has selected wines direct from the producer, from his winegrower friends.
Onion soup, terrine, leeks with gribiche sauce for starters, rabbit with mustard, veal blanquette and vegetarian pot-au-feu for main courses, lemon cake, crème caramel and iced nougat for dessert are just some of the dishes on offer. Other dishes on the menu include hunter-style poultry pie, gizzard fricassee and mushroom omelette.
