Goodbye Le Safran, hello Le Collectionneur. The restaurant at the Hôtel du Collectionneur has undergone a complete overhaul, unveiling a more welcoming and pleasant setting. Gone are the dark spaces and the restaurant divided in 2 (even if you can still privatize part of the restaurant thanks to sliding panels).
The all-new Collectionneur is larger and more spacious. It also boasts a new terrace, a green patio where you'll love spending time. As a result, it now offers no less than 3 magnificent terraces: a shaded front terrace overlooking the street, the new interior patio and the hotel's famous large terrace. As a result, the restaurant now offers no less than 240 seats and 150 covers spread over the 3 terraces.
True to its identity, Le Collectionneur has chosen to play theArt Deco and design card. Marble tables, velvet seats, geometric shapes and light effects form a harmonious whole.
As for the cuisine, Joël Veyssière and Nicolas Amelin have concocted a menu in their image, a creative menu that marries genres and revisits, both gourmet and contemporary. For example, the excellent colorful perfect egg combines spelt bulgur with citrus fruit and watercress mousse. The perfect blend of sweetness and pep. Or why not try the Landes white asparagus with Osseau Iraty mousse, generously accompanied by Aldudes valley ham. Melt-in-your-mouth and crunchy, well-seasoned with a sublime mousse, we approve.
As for the main course, we're completely smitten with the excellent Octopus, grilled to perfection and tender to perfection. We love the combination of quinoa with passion fruit, kaffir lime vinaigrette and guacamole. Carnivores won't be able to resist the Black Angus Beef Picanha with Chimichurri, married to a potato millefeuille, a timeless classic.
Finally, the menu features a selection of desserts from the restaurant and creations by Christophe Michalack. Are you more of a Baba Mojito, vanilla cream or lemon tart by Michalack? We're more of both...
Of course, dishes are subject to change with the seasons.
Finally, for a relaxing break, the bar offers some excellent signature cocktails, such as the sparkling Basil Connection, which combines strawberry, lime and ginger.
