Astara's homemade blini recipe

No one says no to blinis for a drink. And we guarantee, if you make them yourself, they will be even better! You don't know how to make them? Don't panic: Astara gives you the recipe for its homemade blinis.

Recipe for Astara's homemade blinis

For 12 people
Duration : 2 hours

Ingredients :
4 eggs
50g of melted butter
400ml of warm milk
250g of flour
4g of baking powder
A pinch of salt

Preparation:

In a large bowl, pour 30ml of lukewarm water and add the yeast, let it rest for 5 minutes. Pour half of the warm milk over it and mix.

Add the flour and mix with a fork until the mixture is smooth.

Filter the bowl and let rest for about 1 hour at room temperature.

Add the remaining milk to the dough.

Separate the whites from the yolks, beat the whites until stiff and set aside.

Mix 3 yolks with the dough, add salt and melted butter until smooth. Gently fold in the egg whites.

Filter and let rest again for 30 minutes.

In a non-stick pan, cook the blinis to the desired size.

Serve them warm with fresh cream and smoked salmon, tarama or a few grains of caviar, for the most gourmet.
