Looking for a fine gourmet restaurant on the outskirts of the Château de Chantilly? We're off to discover La Table du Connétable, the Michelin-starred restaurant nestled in the superb Hôtel Relais et Château de l'Auberge du Jeu de Paume.
On arrival, we are greeted by a chic yet convivial atmosphere. Like an inn, the place is as welcoming as it gets, and feels almost like home (with service and refinement to boot). To reach the restaurant, located at the far end of the charming hotel, you cross the premises, sublimated by Christmas decorations.
We pass the cosy, intimate bar, where you can enjoy a drink, the central terrace and Jardin d'Hiver, the other, more casual restaurant.
La Table de Connétable is a rather intimate room with a dozen tables overlooking the kitchens where the chef and his brigade officiate before our very eyes.
Clément Le Norcy, the restaurant's new Executive Chef, is no stranger to the place. Indeed, this chef, who comes straight from the Hôtel du Fouquet's where he worked at Joy, is originally from Chantilly. It's a real return to his roots for him, since he cut his teeth in the same restaurant with Arnaud Faye, who was awarded his 2 stars just a few months after the restaurant opened.
Chef Clément Le Norcy is therefore on familiar ground as he sets out to tackle the new menu at La Table du Connétable. For the restaurant, the chef strives to work closely with local producers to select the best ingredients for his dishes. Good products and original, subtle combinations are what he wants to offer us. He works maliciously on his pairings and delights us with the sweetness of his sauces. According to him, sauces are essential to balance the flavors and textures of each dish.
Choose from a 3-course or 5-course menu, depending on your mood and appetite (€110 for 3-course and €160 for 5-course). If you're a real gourmand, you'll be tempted by the 5-course menu for a maximum of discoveries. We love the refinement of the appetizers, which combine beautiful presentation and powerful flavor. We won't give you all the compositions, but we invite you to discover them with your own eyes and taste buds once you're there.
After a lovely beurre manié, served with a spoon and fresh bread, you'll be seduced by just-cooked Langoustine, awakened by the pep of its tangy condiments.
Monkfish, ideally cooked, marries perfectly with vegetables that are both melting and crunchy. We love the combination of cabbage and a creamy, iodized sauce.
As for the lamb, the chef has chosen to work with several noble and less noble parts, but with the fat removed and reworked. Here, beet is used in a variety of ways, with a sweetness that marries well with the melting lamb.
Of course, no meal is complete without cheese, and it's fair to say that the cart has something to delight cheese lovers in search of variety.
Finally, after a pre-dessert that was like a game to discover its flavors, my sidekick and I opted for an à la carte dessert (the excellent French toast for those with a sweet tooth) and on the menu: the famous Figue de Solliès, which we highly recommend.
In short, the Table du Connétable has been modernized thanks to Clément Le Norcy's personal and surprising cuisine, while maintaining the authenticity of the establishment - we love it! Please note that the Table du Connétable is currently open from Thursday to Saturday evenings for dinner, from 7:00 pm to 9:30 pm.
