The famous Ritz Paris opens its brand-new restaurant, l'Espadon, in collaboration with talented chef Eugénie Béziat. A unique gastronomic experience awaits you in a sumptuous setting overlooking the hotel's Grand Jardin.

Among the restaurant openings expected this fall 2023 is L'Espadon, the famous restaurant at the Ritz in Paris, which had seen its doors closed following the departure of Nicolas Sale in March 2021. The arrival of Eugénie Béziat, initially announced for spring 2022, has been a long time coming, and it is finally since this Tuesday, September 26, 2023 that we can now taste her cuisine at the heart of this emblematic gastronomic venue in the capital.

The talented 40-year-old chef honed her skills alongside such gastronomic greats as three-starred Michel Guérard and Michel Sarran in Toulouse. She also won over the taste buds of gourmets by taking the reins of the starred kitchens of La Roya in Saint-Florent and La Flibuste in Villeneuve-Loubet.

For this opening, a completely new setting awaits us, with a spacious terrace and a warm, intimate dining room atmosphere. In terms of cuisine, the chef will be blending French gastronomy with Eugénie's childhood memories of Africa and the Mediterranean of Provence.

This reopening promises a renewed culinary voyage. With a background in Africa, the Congo, Gabon and Côte d'Ivoire, we expect Eugénie to transport us "between two continents". With her experience working with Michelin-starred chefs, we're bound to expect some finely orchestrated dishes.

Among the dishes not to be missed is the lobster, manioc and bissap, a gourmet composition that will take you on a sensory voyage. Also on the menu: brede mafane oyster with the spicy-peppery taste of Para watercress, and Houdan poultry, prepared in the style of Yassa chicken.

On the sweet side, the inescapable Pastry Chef François Perret will delight gourmets. In charge of desserts, he plans to concoct sweets in perfect harmony withEugénie Béziat's menu. The perfect way to end a meal.

L'Espadon now also offers a fine outdoor experience thanks to its terrace overlooking the Grand Jardin. Imagine enjoying a meal under the starry Parisian sky, in an illuminated garden, sheltered from the hustle and bustle of the capital.
