As you exit Passage du Caire, you come across Perdue and its golden brioches in the window. The concept? An original, gourmet take on the brioche perdue, both sweet and savoury. With a cosy, full-size dining room, an open kitchen and a small terrace in front, all you want to do is settle in and have the menu brought to you. We're greeted by the two partners: Tom, who came up with the idea for the restaurant, and Julien, who's in charge of the stoves.
Perdue, located at 44 rue du Caire in Paris's 2nd arrondissement, offers savoury brioches perdu to start with, with or without a side, and sweet brioches perdu to round off your meal. Two different formats are offered: the "petit format", which is already quite hearty, with a slice of brioche and toppings on top, and the "grande faim" sandwich format (+3€ on the brioche chosen), with a slice of brioche on top.
A lunchtime option is also available, with a savoury brioche + a side dish, or a sweet half-brioche + a drink, all from 8.5€ (the price of the option changes according to the savoury brioche chosen).
Tom and Julien offer six savory recipes on the menu, including the "Chicken run" brioche perdue, with crispy chicken, mustard cream and caramelized onions (€10 single, €12 formula), the"Farniente" with homemade burrata and tomato confit (€9 single, €11 formula) or the " Vegge", with homemade eggplant and zucchini tagliatelle accompanied by homemade tomato confit (€9 single, €11 formula).
The savory brioche is light and goes perfectly with the flavors on the menu. Sides can be added to your brioche, such as sweet potato fries, which are melt-in-the-mouth and perfectly seasoned.
Once you've tasted the savory brioches, it's time to discover the sweet version, much better known to the French. Tom and Julien have chosen to include a "Tradi" option on the menu (5€ for the sugar, 6€ for the spread), where you can add pistachios, hazelnuts, almonds... But also the "Canapple" (8€) with apple and cinnamon.
The classic recipes are complemented by more complex, in-house recipes: "L'Alpine" (12€), with its delicious, perfectly balanced taste of génépi, and the port-infused "Popow" (10€). Whichever taste you choose, the sweet brioche, which is very soft, will be the ideal gourmet break.
The special thing about Julien and Tom's restaurant is that their brioche is made in the bakery just across the street, with a recipe created by them for both the savory and the sweet. After a good lunch or snack, don't hesitate to visit the Vignes en ville wine bar and discover its concept, as Tom is also the owner.
