Aldehyde, chef Youssef Marzouk's first Marais restaurant

This autumn, chef Youssef Marzouk opens Aldehyde, his first restaurant in the heart of the Marais district. The restaurant will feature French cuisine with Tunisian influences.

Youssef Marzouk has worked in some of the finest Parisian restaurants, under the aegis of some of the world's greatest chefs (Nicolas Sale at the Ritz, Tomy Gousset at Tomy & Co, Arnaud Donckele at Le Tout-Paris at Cheval Blanc), as chef de partie, pastry chef and sous-chef, before finally opening his first gastronomic restaurant in Paris, under his own name.

Named Aldehyde in reference to the molecule contained in the cleaving coriander that reflects the distinctive character of his own cooking, this new and first table marks a turning point in the career of this chef who has been immersed in the kitchen from an early age, the son of a pastry chef father and a restaurateur mother.

In the heart of the Marais, this neo-owner-chef imagines a refined French cuisine, sprinkled with memories of his childhood, his travels and his Tunisian roots expressed through vinegars, herbs and spices.

Carrot and cumin canapé (a variation on the Tunisian kemia); saddle of lamb in two ways, roasted pink and then lacquered with barbecued eel juice and served as a pressé; piquillos stuffed with a lightly lemony herbed fromage frais (in the spirit of a slata mechouia); spiced tartlet of shredded lamb, topped with an eel vinaigrette salad... So many delights to look forward to next fall.

For lunch, count €35 for a starter/main course and €45 for a starter/main course/dessert; for dinner, €95 for a 5-course menu, €120 for a 7-course menu. A table to discover very soon!
