The Dumant siblings take over Le Mouton Blanc, Normandy-style bourgeois cuisine

The historic Auberge du Mouton Blanc is enjoying a second lease of life in the 16th arrondissement, under the aegis of the Dumant siblings and restaurateur Tristan Lefebvre. They offer a bourgeois cuisine with hints of Normandy.

A veritable historical institution inwestern Paris , where La Fontaine, Molière and Boileau once met, L'Auberge du Mouton Blanc is enjoying a second lease of life in the new year, having been taken over by the highly efficient Dumant siblings. A new page is being written for this old Parisian inn.

From Margot and Félix Dumant, brother and sister from a family of restaurateurs, we already know Aux Crus de Bourgogne, Le Chardonnay, Aux Bons Crus, Les Marches and more recently Aux Lyonnais, in association with Alain Ducasse. These traditional Parisian addresses celebrate French cuisine that is just as traditional, gallant towards the past but far from dusty.

For this takeover of Le Mouton Blanc, the duo teamed up with Tristan Lefebvre, former owner of Le Vin de Bellechasse. Nestled in the heart of the 16th arrondissement, at 40 rue d'Auteuil, this address, which is one of the oldest restaurants in Paris, enters a new era... while continuing to honor its authentic and generous French cuisine.

This bourgeois cuisine has been given aNorman twist by the trio. After all, Deauville isn't that far away! You'll find mussels and French fries with marinara or cream sauce (21€-23€), oeufs cocotte with Pont-L'Évêque cream sauce, veal escalope à la normande (25€), sole meunière, black pudding with apples (22€), Vallée d'Auge chicken, a host of shellfish, Normandy cheeses, and to finish on a high note, the traditional trou normand before moving on to faisselle and apple compote or teurgoule, Caen-style rice pudding.

A delight of simplicity, too, with this avocado-crevettes cocktail sauce (14€), as vintage as it gets, or these Royans ravioli (19€), creamy to perfection. For lunch, the starter/main course menu will cost you €24; €39 for the starter/main course/dessert/apéritif/glass of wine menu - an old-fashioned formula!

In the decor, too, the past of the place has been respected. Studio Rodaa has carefully combined the codes of the Parisian bistro (zinc counter, leather banquettes) with more contemporary touches (terrazzo floor), like a hyphen between the different lives of Le Mouton Blanc.
