Push open the door and enter the world of painter Jean-Baptiste Corot. Owned by the Beautiful Lifes Hotels Group and a new member of Relais & Châteaux, the Étangs de Corot hotel has been completely redesigned by architect Christophe Bachmann and his teams at TKP.
Inside the building, we walk along the corridor, where an enormous , luminous fish welcomes us, before descending the floors to discover Le Corot, the hotel's gourmet restaurant, where Rémi Chambard officiates with a master's hand. A mastery recognized by the restaurant's first Michelin star in 2014.
If you were familiar with Le Corot before the renovations, it's a whole new world. Forget the dark atmosphere, with hunting trophies all over the walls, and make way for white and wood. Lovely materials, designer lighting and a refined, Japanese-brown ambiance, all overlooking an outdoor terrace, are the order of the day.
We love the large table, except for large groups, the superb cellar that welcomes us and the open kitchen where we can watch the chef and his team officiate before our very eyes.
Rémi Chambord 's cuisine is a blend of expertise, discovery and local produce. Enjoy dishes based on fresh produce, carefully selected directly from the best producers in the Paris region. From the Potager du Roi 's delicious herbs picked by the chef, to the Berberot family 's watercress, to the milk from Ferme de la Chalotterie, you'll love traveling to the Paris region for a meal.
Choose from the 6-course Promenade menu at €130 or the 8-course Grande Balade menu at €165. For our part, we're tempted by the Grande Balade menu, lured by the boletus eggs and the lobster with champagne and watercress, which we loved, by the way.
We also liked the Tomate à la marjolaine et livèche ( tomato with marjoram and lovage), which awakens the taste buds, and the crispy mushroom tartlet, which highlightsagastache, an aromatic herb that deserves more recognition.
We also like the trout confit with its sorrel flavor and lemon caviar.
Finally, on the dessert side, Nicolas Bergé's chocolate, combined with the powerful taste of fir and blackberry, takes us visually into the undergrowth.
Of course, the menu changes with the seasons. It's an opportunity to come back and treat yourself to other choices. With impeccable service, an attentive maitre d'hôtel and exceptional digestifs you'll be telling us about, you'll be pampered.
When the weather's nice, the place is the perfect setting for an alfresco lunch or a stroll in the garden.
