This year, François Perret, the famous and talented Pastry Chef at the Ritz Paris, offers us a signatureYule log that takes us back to childhood. The Bûche Père Noël, the collection's flagship product, is the embodiment of a regressive, whimsical Christmas. This dessert combines a coconut cookie lightly spiced with four spices, a light coconut mousse, and a mango and lime compote accompanied by pieces of fresh coconut. The playful design by François Perret twists the classic shape to transform Santa's beard into a fluffy madeleine, a nod to the Ritz's signature pastry and the world of Marcel Proust. This gourmet dessert is priced at €110 for 6 to 8 people, or €20 individually.
Another innovation, the Bûches Madeleines Entrelacées revisit the emblematic Ritz Paris madeleine. Available in three flavors - Tout Chocolat, Poire Chocolat and Citron - they play on textures and tastes to delight every palate. The Tout Chocolat version promises an explosion of rich, melt-in-the-mouth flavors; the Poire Chocolat marries fruity sweetness with cocoa intensity, while the Citron offers a light, tangy touch. These logs are available at €95 for 6 to 8 people.
For fans of individual desserts, the flavors of the logs are brought together in Entremets Madeleines de Noël, priced at €18 each. Each entremet retains the intertwined shape of the logs, and is available in Tout Chocolat, Poire Chocolat and Citron, perfect for a variety of pleasures.
Finally, Madeleines de Noël, available individually for €5, are a true declaration of love to the spirit of the season. François Perret offers two original recipes: Pain d'épices (Gingerbread), with a heart of orange marmalade covered in a half-milk chocolate, half-royal icing, and Caviar de Vanille (Vanilla Caviar), with intense vanilla, a melting heart and a white chocolate icing enhanced with gold leaf. These madeleines are also available in boxes of 5, 8, 12 or 20 pieces to prolong the pleasure.
