As a tribute to Boris Vian – whose 100th birthday is celebrated – Pierre Hermé has revisited Froth on a Daydream writer’s favorite dessert: crea puff, to discover from June 24, 2019 to March 31, 2020 on the Les Deux Magots terrace.
When Pierre Hermé has been asked to create a dessert, he threw himself into the writer’s work and life. And it turns out that Boris Vian often went to the bakery with Raymond Queneau to buy cream puffs and to enjoy them in a café. It’s towards this classic pastry that he turns, especially that Pierre Hermé never made cream puff before! The challenge was double…
He told us that in the beginning, he made a coffee cream puff, but thought the taste was double-edged (yes, some people actually don’ like coffee or the taste of coffee!), Pierre Hermé has then changed his plans.
Then, thinking about it, he saw that Chloe is a recurrent character in Vian’s work and it’s perfect! Chloe is also the name of a pastry pairing… the raspberry-chocolate pairing!
This is how was born… “La Trompinette de Boris Vian par Pierre Hermé” (a funny name indeed, but it was the music instrument designed by Vian). We have had the chance to enjoy it during a preview showing, and we must say that all the work behind is very surprising.
If we all know the principles of the cream puff, Pierre Hermé managed to give it a twist thanks to a puff within a puff, to not mix chocolate and raspberry so they taste how they’re supposed to. We have a dessert with very recognizable tastes and very fresh, not sickening despite its size.
Pierre Hermé explains he wanted to pay tribute to “Boris Vian’s imagination and his irreverent character”, it’s a success!
