The strawberry tartlets
I’m talking about a shortcrust topped with hibiscus cream, Mezcal syrup with a nice woody taste, strawberry marmalade with agave syrup twisted with Provence herbs and elevated with Mezcal jelly dices. It’s fresh, surprising and we love it!
The infused rum baba
For this tasty pastry, the chef used some rhum arrange (or infused rum) he did himself and let sit for 8 months. A rum mixing lychee, vanilla, pineapple, kumquat and we must say it’s a feast for the taste buds.
Gourmand chou bun
If you ask me what I like most when it comes to pastries, I would say that chou bun holds a perfect spot in my heart. And there’s nothing quite like some classics to be happy. You’ll fall for the vanilla chou bun, praline heart, enhanced with crispy cocoa nibs and golden hazelnuts.
