Chef Albert Riera likes to use the fruits and vegetables from his garden, starting with the apples he uses to fill his plump doughnuts: a highly regressive recipe to devour with the family, which he shares with you!

Albert Riera's apple fritters recipe
Serves 4
Ingredients:
4 apples
200 grams of flour
2 egg yolks
4 grams of salt
200 grams of milk
3 tablespoons of sunflower oil
3 egg whites
1 packet of baking powder
1 packet of vanilla sugar
1 pinch of cinnamon powder
Preparation:
Pour the flour, baking powder and pinch of salt into a bowl and make a well in the center. Pour in the egg yolks and sunflower oil. Mix with a whisk. Gradually add the milk while continuing to mix. Strain the mixture through a sieve if there are any lumps so that the mixture is smooth.
Beat the egg whites with an electric mixer.
With a spoon, take the egg whites and gently fold them into the previous mixture, then set aside.
Peel and cut the apples into slices about 1 cm thick and remove the seeds. Place them in a bowl and cover them with vanilla sugar. Set aside.
Pour the frying oil into a large pan and heat. When the oil is hot, dip the apple slices into the doughnut batter, then dip into the hot oil. Be careful, this step is dangerous and not recommended to do with your children. Turn the doughnuts over halfway through the cooking time and let them brown well.
Remove the fritters from the oil and place them on paper towels. Sprinkle the doughnuts with sugar. Place them on a baking sheet and put them in the oven on the grill position at half height for 3 to 4 minutes to caramelize them. Watch them carefully and take them out as soon as they start to brown.
Now you can enjoy them warm!
