L'Eclair de Génie is a new generation pastry shop, with a modern decor, opened a few days ago on rue Pavée in the Marais. A special store since it is a store dedicated exclusively to the eclair and the chocolate truffle.
But be careful, not just any eclairs and not just any truffles. Indeed, Christophe Adam, former creative director at Fauchon unveils a fabulous collection of creations as diverse as they are varied. In 10 years, at Fauchon, he has been able to revolutionize the éclair, restoring its reputation through creations as sublime as they are good.
It is therefore quite natural that Christophe Adam makes the éclair his favorite pastry in this new Parisian boutique. After having opened Adam's in Bercy Village and then rue Casanova, in the 1st district, our king of pastry continues in his momentum. During our visit, we were able to discover 12 different eclairs. Some of them will remain unavoidable and others will be created according to the seasons and the events. If the Santa Claus éclair with sparkling milk is a hit at the moment, expect to discover soon the Saint-Valentine éclair or the Gayride éclair.
And because today's pastry chefs reveal their genius in visual creation, Christophe Adam will soon propose art-themed eclairs. So, what do you think, will he offer us Mondrian, Picasso or Mona Lisa eclairs? A case to follow.
Among the best sellers of the moment are the vanilla and pecan eclair, the coffee eclair, of course, the salted butter caramel eclair and the candy pink eclair, which offers a rose and marshmallow flavor.
For those who like to discover new things, turn instead to the milk chocolate-mango-banana éclair, the lemon Yuzu which reminds us of lemon pie or the inevitable pistachio-orange.
As for the chocolates, which for the holidays are dressed in a pretty glittering dress, the flavors are just like those offered in the eclairs. You will find the orange-pistachio truffle, the tender caramel with Yuzu or the praline. The pretty boxes make them a superb gift to offer.
As for creation, everything is made on the spot, with rigor and meticulousness. The pistachio and the praline are home made. Christophe Adam tries to use quality and French products if possible. He even admits that the caramel eclairs in the window are made with butter brought by his mother from a small producer. Thanks mom, it was great!
On the tasting side, the vanilla eclair with pecans is a killer. We like the lightness of the cream which reveals a real vanilla flavor from Madagascar (vanilla beans) and its "not too sweet" side. As for the orange-pistachio éclair, a good freshness is there. As for the salted butter caramel, more intense in taste, it delighted the taste buds of the informed editors.
In short, a nice address to discover. Good tasting.
