Want to discover a nice new restaurant in the 7th district? Let's go and discover Pertinence, a small restaurant that has everything of a big one. An impeccable service, a chic and modern decoration and plates as good as beautiful, we necessarily adhere.
We had already discoveredRyunosuke Naito at the Bistrot Alexandre III where he amazed us with his creative and richly flavored cuisine. It was there that he met his second, Kwen Liew, with whom he decided to open a refined table. This chef, with a great career path, studied at Taillevent with Alain Solivarès and also with Yannick Alléno at Cheval Blanc and at Le Meurice as sous-chef. One might as well say that the quality is there. Perfect cooking, dishes rich in flavors, we ask for more.
As forthe decoration , Ryu & Kwen entrusted the architect Gérard Ronzatti from Cabinet de Seine Design with the layout and design of the place. It is a nice marriage between French materials and Japanese inspiration. Large bright windows, white drapes all around the room, a wave of wood on the ceiling and copper objects form a harmonious and soothing whole.
As for the plates, the chefs have decided to work French dishes with subtle Asian flavors. Thus, we can find on the menu dishes such as shellfish (sea almonds, cockles and razor clams) steamed in a ginger broth. It is simply delicious.
Special mention for the crispy Risotto with ham cream, topped with an egg cooked at low temperature. A real delight to try.
Lovers of veal sweetbreads will be tempted by the pie and marrow with its delicious crunchy vegetables.
As for the main course, the Roasted Sea Bass is a winner. With its potato mousseline and yellow wine sauce, you'll be delighted.
Unless the Roasted Veal Loin with sweet onion caramel or the excellent red mullet with crispy scales and a good taste of chorizo and red wine, you're in love.
We finish the meal in beauty with delicious desserts. I who do not necessarily follow very sweet, I loved these fresh and little sweet desserts. The apple crunch and its lemon mousse as well as the mango passion tart are both sure values, to test absolutely.
In short, a nice restaurant as we like.
