No need to look for the restaurant's name anywhere, Seveste can only be found on its terrace, opposite the Théâtre de l'Atelier. In fact, this neo-bistro has taken over the Place Charles Dullin in the 18th arrondissement, in the shade of its gigantic century-old lime trees. So it's time to sit down to dinner in this charming, picturesque square that is so much a part of Paris, opposite the historic building of the former Théâtre Montmartre, designed by Pierre-Jacques Seveste in 1822 (hence the restaurant's name, by deduction).
At Seveste, you'll experience the hustle and bustle of Parisian life. A lively place par excellence, you'll find yourself in front of a swarm of spectators attending one of the plays performed in one of the few 19th-century theaters still in operation. The best way to do this is to grab a bite to eat after the show and continue to enjoy this timeless setting.
At the helm are brothers Alexis and Josselin Flocon, who are already delighting us with their inventive cuisine at Flocon on rue Mouffetard. For Seveste, they have imagined 3 acts to be discovered according to the time of day. At lunchtime ,the first act begins with a light-as-air tasting, offering a choice of three starters, three main courses and three desserts .The second act opens during the day with a simple menu to discover at any time of day .And finally, the third act lifts its curtain in the evening for a convivial cuisine based on lively, plant-based recipes .

In the evening, you won't be seduced by a classic starter, main course and dessert menu, but by pretty plates to share. We're advised to take at least 3 plates of our choice for two, and try everything (we think it's better to go for at least 4). There's a choice of vegetables, fish, meat and desserts.
For our part, we opt for the excellent Tartelette de petits pois au fromage frais à l'échalote et menthe, deliciously enhanced by a caviar quenelle. We also love the Hake Breton smoked with raspberry wood, served with a fennel and fromage frais salad. Leek lovers won't want to miss the version with Bigorre pig fat and spicy mayonnaise. Last but not least, the Gravelax of free-range duck breast with blackberry pickles and marinated eggplant is a real crowd-pleaser.
Beautiful combinations, exceptional products, a good time was had by all, even if, let's face it, we weren't in too much of a hurry that day. A slice of Brillat Savarin, a delicious cheese with a peach and sage condiment, and an Ile Flottante au foin later, and we're full.
We spend a lovely evening in Montmartre, sometimes to the sound of troubadours singing under the trees. We're not going to say no to a little timelessness and fresh, creative cuisine.
