Sphère is the latest addition to a family of restaurants already delighting our taste buds: Passionné, Shiro, To and Ao Izakaya. We're off to discover this new gourmet restaurant on rue de la Boétie in the 8th arrondissement, a stone's throw from the Miromesnil metro station.
On arrival, you'll be impressed by the beautiful, spacious dining room, with different areas to accommodate both large groups and couples, and different alcoves on the sides of the main room. Designed by architects Anegil, the decor is uncluttered and Zen-like. We love the retro-chic designer lighting and the lounging benches. At Sphère, there's no shortage of space.
In the kitchen, we find Japanese chef Tetsuya Yoshida. This talented young chef has worked his way up through the ranks of Michelin-starred establishments such as Les Enfants Gâtés (1 Michelin star) and Esquisse (2 stars). After 5 years at Canailles, he takes the helm at this new address, where he aims to reveal his talent and delicate cuisine.
At Sphère,Tetsuya Yoshida offers us refined French cuisine that he hopes will evolve with the seasons. A la carte, you can opt for the Carte Blanche menu, available in 4, 6 or prestige courses. For lunch, the starter + main course + dessert menu costs €48 (€39 for starter + main course or main course + dessert).
The Carte Blanche menu begins with 4 amuse-bouches: Gougère emmental, madeleine cake with Iberian chorizo, grilled mackerel on a bed of celeriac and chips, and parmesan sablé with cauliflower purée and fish roe.
Next came a citrus-marinated sea bream with salad and fennel purée, awakened by diced grapefruit and Timut pepper jelly.
As for my sidekick, he enjoys a melt-in-the-mouth marinated salmon with crisp fennel salad and trout roe.
We continue with a roasted monkfish tail accompanied by crayon leeks and hazelnut butter espuma.
The third course unveils a beautiful plate of Simmental beef tenderloin, accompanied by meat jus, sweet purple carrots, watercress mousseline and potato crush. Melt-in-your-mouth delicious.
Of course, the sommelier will be delighted to advise you with his extensive wine list to match your dishes. The curious can discover the superb cellar in the basement. My sidekick, meanwhile, enjoys a fine Filet de Canette with Brussels sprouts and pumpkin mousseline from the à la carte menu.
Finally, it's time for dessert. We discover a deliciousCrémeux au chocolat with crispy tuiles, caramelized walnuts and a quenelle of vanilla ice cream.
