Located in the vibrant heart of Paris's 9th arrondissement, Rue Bergère is a veritable treasure trove of cultural and culinary heritage, where market gardeners, bourgeois and shopkeepers have crossed paths over the years. It's on the corner of the peaceful Cité Rougemont that the gastronomic restaurant Passionné recently opened its doors.
Offering refined and daring French cuisine, Passionné is the new must-visit destination for epicureans in search of an unforgettable gastronomic experience in a charming, historic setting.
Offering an evolving culinary experience throughout the day, this restaurant is the ideal place to gather and chat while the neighborhood comes alive at lunchtime. As night falls, the intimate, hushed ambience invites diners to enjoy an unforgettable dinner with friends or as a couple.
Interior designer Kuniko Takano has created a minimalist, elegant decor, featuring a bar with midnight-blue mosaics, walls in dark tones, and sleek furniture and lighting. The result is a sophisticated atmosphere, perfect for relaxing and enjoying exceptional cuisine in a contemporary, timeless setting.
Le Passionné is a refined cocoon that also includes a table d'hôte facing the open kitchen, as well as another hidden table for 8 guests. In short, a new, confidential address where French gastronomy is sublimated every day according to the chef's whims.
"My strong attachment to French cuisine comes from my mother. I also grew up in Japan, on land at the same latitude as France, rich in legumes and other roots. As a result, I developed an immense respect for small-scale producers and their products, which I like to work with in their entirety, right down to the root, right to the bone. I cook with all my heart, and in that sense, you could say I'm a true enthusiast."
This is how Japanese chef Satoshi Horiuchi explains his culinary philosophy.
Passionate, he is. In his dashing thirties, he now shares his gastronomic creativity behind the stoves of Passionné's open kitchen.
The chef works with Bottes en Ville, a fervent advocate of sustainable and organic agriculture, Caviarly's, an expert in Iranian caviar, and Hydropousse, an innovative vertical farm in the heart of Paris.
The chef's talent is expressed through his seven-step "carte blanche" menu (dinner only), and a starter/main course or main course/dessert menu at just €47 for lunch.
But there are also a few "à la carte" dishes, where he assumes his strong penchant for seasonal vegetables (but not only).
With taste buds traveling to the whim of his inspirations, we discover, for example, as a starter, a Grilled Octopus with potato purée, aioli sauce and spinach powder, or radishes sprinkled with African bottarga in samphire sauce.
The chef continues with a crispy veal rice with shellfish sauce, or a straw-smoked roast beef fillet with red wine sauce.
Le Passionné delights us right through to the end of the meal with gourmet, graphic desserts like the Pavlova Passionné-style or the seasonal Chocolate dessert, which is renewed every month.
