The new restaurant La Chambre Bleue by Dani Garcia, which takes its place in the new Maison Delano Paris hotel, in the heart of a former 19th-century mansion, is a new gastronomic experience to be discovered from April 1, 2023. La Chambre Bleue is a 170-seat restaurant set around an inner courtyard. A succession of lounges, open kitchens, a central bar and two wine cellars make for a comfortable, elegant space that can be covered in winter and open-air in summer.
Spanish cuisine has become an international benchmark, and Malaga-born Dani Garcia has made a major contribution by offering an innovative interpretation of this traditional cuisine. Dani Garcia is a renowned chef who already runs a dozen restaurants worldwide, from Marbella to New York, via Doha, London and Madrid. His new project, La Chambre Bleue, is a foray into the French gastronomic landscape that marks a new stage in his international expansion.
The menu is a veritable invitation to taste travel. Starters feature seafood such as oysters, lobster, anchovies and sardines, as well as the famous Iberian bellota ham.
Next, the main courses honor Spanish cuisine, with paellas, octopus, chicken and txuleta, as well as other Mediterranean dishes such as baked sea bass. The section dedicated to bluefin tuna will delight fish lovers, with tuna tartars, ventrèche and morrillo, or tuna croquettes.
The wine list also promises to be impressive, with a selection of the finest wine-growing regions and great vintages to choose from with the help of the sommelier. For cocktail lovers, La Chambre Bleue offers a menu of ten cocktails inspired by Picasso 's works from his Blue Period.
The restaurant's architecture and design are just as remarkable as its cuisine. Lázaro Rosa Violán Studio, in collaboration with Dani Garcia, has elegantly combined the Andalusian and Mediterranean spirit with the original architecture of the mansion. The open-plan kitchens, with their display of fresh fish, are decorated with a ceramic fresco with Cubist accents, while the custom-designed furniture responds to the fabric adorning the panelled walls. Cushions adorned with toile de Jouy add a touch of warmth and comfort, creating an eclectic, contemporary ambience.
