Did you know that Ladurée was not only a tea room, but also a restaurant? It is to highlight its restaurant that the House of Ladurée has imagined a collaboration with Louise Bourrat, the winner of Top Chef 2022. With a restaurant in Lisbon that is always busy, Louise has a lot to offer, but many French people, especially Parisians, are frustrated not to have been able to taste her creative cuisine yet.
So we salute this new concept of Soirées Royales at Ladurée, which offers us the opportunity to taste Louise Bourrat 's audacious cuisine from April 20 to October 27, 2023. To treat yourself, head to the historic house at 6 rue Royale in Paris. With its 40 seats in two rooms with a historic setting, seats are expensive, so don't delay in booking!
This collaboration between the iconic pastry house and the talented chef offers us an ephemeral restaurant with spring and fall flavors. The young chef Louise Bourrat declares that she fell under the spell of the Marie-Antoinette style of the rue Royale, where she wanted to bring her personal touch and her audacity. Thus, she revisits the evening menu inspired by the "salon de thé" with a spring menu on the theme of flowers, available from April to September. Another menu with autumnal flavors will follow from September to the end of October.
The experience is twofold: it begins in the reinvented tea room and then continues in the upstairs restaurant for a gourmet dinner. Various creative cocktails are on offer, from The High Low Tide (Rock Oyster infused with squid ink, Bourguoin verjuice, black radish syrup, old fashioned, magic velvet) to the Oriental Express (Mezcal, pomegranate juice, lime juice, harissa syrup, rose water). Good point for the good mocktail Le Botaniste (Cucumber juice, elderflower cordial, basil, lime juice, sichuan pepper, magic velvet) which does not leave the non-alcoholic on the sidelines.
The chef unveils a journey in 5 steps and 12 original creations. Discover the menu:
Faux gras and elderflower macaroon
Cigar of scampi with orange and horseradish cream
Cornbread with saffron and osciètre caviar
Octopus hot dog with rose harissa
Religieuse with crab and poppy cream
Matured duck with spices, hibiscus, lavender, turnip, radish and lovage
Rice pudding with coconut milk, jasmine and yuzu sorbet
Rhubarb, fennel and Sun King tea tartlet
Ispahan Vadouvan cookie
Eugenie vanilla
Eucalyptus chocolate ice candy
We loved the small bites that explode in the mouth, married to the subtle flavor of flowers. The duck, both melting and crispy, awakened by the spices and its gourmet sauce is a delight. And I love the rice pudding dessert which combines the regressive side of rice pudding with a natural coconut sorbet, the good taste of jasmine, the crispness of grilled rice and the pep of yuzu jelly. This is a real taste discovery that is worth the detour.
This collaboration shows the boldness of Ladurée with its new direction. In any case, we love the cuisine of this Franco-Portuguese chef, inspired by her travels between Lisbon, Paris and Santiago de Chile, who offers an authentic cuisine highlighting forgotten products and original associations. Louise Bourrat embodies this new generation of chefs: modern, committed, responsible and full of talent.
