Confit de canard is a dish based on duck legs confit in their own fat. Marinated in aromatic herbs for several hours, the legs are then slowly confit until tender and juicy. The confit is usually served with sautéed potatoes, for maximum indulgence.
Magret de canard (duck breast) is a fillet of duck breast, one of the noblest parts of the animal. Generally grilled or pan-fried over high heat for quick cooking, magret is served pink inside to preserve all its softness. It can also be served with a cherry or orange sauce.
