One of the great classics of French gastronomy, escargots en persillade are considered a delicacy of choice, eaten either as a starter or as a main course. Quite simply, the French love them, much to the chagrin of tourists from all over the world, who are sometimes astonished, sometimes disgusted, but in any case intrigued by this staple of French cuisine.
The snails are boiled in their shells and then extracted for pan-frying. Chefs prepare a persillade sauce of butter, garlic and parsley, which is then poured over the snails, which are then served in their shells at the table. At home, the snails are topped with a small disc of beurre maître d'hôtel that melts when cooked, and can be accompanied by a small slice of toasted bread to add a little crunch to the dish.
