The Holidays are just around the corner and it is time to choose which yule log(s) will proudly stand on your festive table. At Mam, the Holidays will be scrumptious and varied with 5 yule logs created by pastry chef Pierre Chirac.
There will be something for everyone to say the least, as Stéphanie Le Quellec's pastry chef is versatile. Whether you go for the chocolate, gluten-free yule log - perfect for gluten-intolerant or curious people - or an exotic cake adding sun to your home in the middle of winter, or for a very comforting Macadamia nut cake - our favorite! - you are sure you will never be wrong for quality is to be expected!
The gluten-free chocolate yule log is based on roll cocoa cake, dark chocolate cream with salt flake, light dark chocolate whipped cream and cocoa shortbread.
The exotic yule log is based on coconut praline crunch, fluffy coconut cake, and mango, passion fruit, banana compote, without forgetting an exotic fruit crémeux and coconut mousse.
The dark chocolate, caramel and salt flake yule log, based on cocoa nib praline crunch and fluffy cocoa cake. Topped with salty dark chocolate crémeux, creamy salted butter caramel, and 70% dark chocolate mousse.
The citrus fruit and orange blossom yule log based on citrus fruit zest crunch, orange blossom financier cake, and citrus fruit (orange, tangerine, grapefruit) marmalade, lemon-bergamot crémeux, and bergamot tea-infused mousse.
The vanilla, caramel and Macadamia nut yule log based on vanilla and Macadamia nut crunch, fluffy vanilla cake, caramel crémeux, and Madagascan vanilla mousse.
Allow €45 for the yule log serving 4 to 5 foodies, and €64for a yule log serving 6 to 8 foodies, gluten-free or not. But you do not have to choose, you know…
