For lovers of good things - this year, forEpiphany 2025, Yazid Ichemrahen and Alexandre Favre unveil their first exceptional galette for Le Royal Monceau - Raffles Paris. The palace's pastry chefs have co-signed an original creation, paying tribute to traditional craftsmanship and already heralded as a must-have for Parisian tables!
The secret? A 100% handmade puff pastry, made with carefully selected French flours to celebrate local craftsmanship and millers. Finely chiselled with a scalpel, this crisp, caramelized puff pastry conceals a buttery, melt-in-the-mouth frangipane with a hint of almond. Poached pears and chocolate shavings from Chocolaterie de l'Opéra add the finishing touch.
And because at Le Royal Monceau, every detail counts, the chefs' galette is crowned with a wax, or rather chocolate, seal bearing the palace's initials, proudly displayed at its center. Simply chic and gourmet!
Designed for eight guests, the Royal Monceau Galette des Rois 2025 is available to order now for collection between January 2 and 26, 2025. It will also be available by the slice at the Bar Long during Epiphany. Please note: orders take 48 hours to prepare.
