Île-de-France: this pastry is the "best 2023 cake in Hauts-de-Seine".

While the prize for the best pastry in Greater Paris went to Cyril Huet, the best "gâteau des Hauts-de-Seine" for 2023 is to be found in Fontenay-aux-Roses. So, what is this pastry and where exactly can you enjoy it? We tell you all about it.

In 2023, one gourmet award followed another. After the best flan, the best butter croissant, the best organic bread, the best almond galette des rois and the best pastry of the City of Paris, it's time for the " best Hauts-de-Seine cake " of the year.

On October 5, the Paris region and the Chambre de Métiers et de l'Artisanat du 92 organized the fifth edition of the " Imagine the Hauts-de-Seine cake " competition, presided over by Stéphane Glacier, Meilleur Ouvrier de France and pastry chef in Bois-Colombes. With the theme for 2023 being " caramel with a flavour ", candidates had to redouble their efforts to create a cake " representative " of quality craftsmanship, and displaying a link with the Hauts-de-Seine département.

After deliberation, the jury finally named " La Folie-Fontaine " as the " best Hauts-de-Seine cake " for 2023.


Behind this mouth-watering creation lies an entremet composed of a light Dulcey chocolate caramel mousse, a fruity bittersweet pink grapefruit cream, a Timut pepper caramel, a soft Pain de Gênes made with Drèche flour (flour from beer brewing) with grapefruit supremes, a crunchy cookie with Drèche flour and Timut pepper, a colorless Dulcey chocolate mirror,"La Folie" IPA beer gel from Brasserie Nemeto in Nanterre and grapefruit confit.

The winning cake was imagined and created by pastry chef Fabienne Zacchi of Comptoir des Pipelettes in Fontenay-aux-Roses, and is available to taste right now! For those with a sweet tooth, please note that this cake must be ordered at least 48 hours in advance, subject to availability, on the bakery-patisserie's official website.

The second prize-winning cake in this departmental competition is"Le Cara'Poire" from Maison Azalée in Gennevilliers. It features pear caramel made from 'Conférence' pears, a ganache and almond paste from Ablis, followed by a pear caramel compote.

Third prize for"Best Cake 2023 in the Hauts-de-Seine" went to Nanterre bakery Au Palais Gourmand. Named"Le Maya", this cake features a cocoa shortbread crust, a chocolate moelleux, a hazelnut praline, a passion fruit crémeux, a soft vanilla caramel, an intense caramel mousse with Hauts-de-Seine honey, and a caramel glaze.
