The Seine-et-Marne département, in association with the Syndicat des Boulangers du Grand Paris, has organized the new edition of the Best Macaron d'Île-de-France competition. On Tuesday November 5, 2024, several pastry chefs from the Paris region presented their creations at the Résidence Château du Mée.
La Pelle & la Toque bakeries and patisseries in Sannois and L'Isle-Adam(Val-d'Oise) have won no fewer than four prizes in the Best Macaroon of Île-de-France 2024 competition. Their creativity and expertise put them at the top of this year's flavors.
La Pelle & la Toque, run by Anthony and Laurine Ragaine, took two first places and two third places. Lotfi, pastry chef at the Sannois boutique, won gold in the innovative macaron category with a daring lemon-mint combination, a perfume balanced between acidity and freshness. The same pastry chef also won bronze for his chocolate macaron, demonstrating his remarkable mastery of the art of macaron-making.
In L'Isle-Adam, Jérémy won first place for his chocolate macaron, a classic choice but revisited with a finesse that convinced the jury. The surprise of this year's competition, however, was his audacious foie gras and fig creation, a subtle blend of sweetness and gastronomic flavors, which earned him third place in the innovative macaroon category. This latest creation offers an original taste experience in which the richness of foie gras balances with the sweet, slightly acidic touch of fig.
For both establishments, this success represents much more than just a trophy.
