For his first solo pastry shop, Kévin Lacote, a talented Parisian pastry chef and former guarantor of Yannick Alléno's Bibliothèque Pâtissière at the Sofitel Paris Le Faubourg, has decided to set up shop in Wagram, a neighborhood lacking in sweet offerings for the chef.
His team, composed of Aurore Pelier Cady, former sous chef of Un Dimanche à Paris, Vincent Coutant of Maison Gérard Mulot and Jean, apprentice at Ferrandi, is busy preparing the dozen or so pastries offered on the menu, in a lab open to gourmands thanks to the glass window!
In his pastry shop, we find classics such as the Saint Honoré (with pecan nuts, please!), the chocolate éclair, the Millefeuille, made up in a minute "to guarantee the best freshness, the best crispness as well as a perfect smoothness of the cream", but also creations, like the chocolate and tonka bean Coumarine, the Solognote apple pie, without forgetting the pastries (including a famous apple turnover), the cakes, the financiers, the madeleines, the cookies and the Churros which remind him of the Foire du Trône of his childhood and his apprenticeship with Yannick Alléno in Dubai.
Open all day long, his tea room is a place of relaxation where it is good to rest. Kévin Lacote being a fan of gourmet breakfasts, he offers a nice formula, with French toast, muesli, granny smith, a hot drink and a freshly squeezed fruit juice for 12 €!
If these pastries are made to be tasted on the spot - the chef even offers a detox drink to relax us - Kévin Lacote doesn't forget the big meals and offers big entremets for 4/6 people at 28 €, to be ordered in advance preferably.
Note that the chef is already planning to give pastry classes, a matter to be followed!
