After rethinking every pastry at Maison Lenôtre Café such as the Opéra or the éclair, chef Guy Krenzer unveils a never-seen-before creation still as caffeinated: please welcome the Cappuccino.
This new pastry has been created by Guy Krenzer after meeting Paris Caféothèque founder Gloria Montenegro. The chef even took care of training with her to learn more about the art of roasting and extracting.
In this custom-made creation, Guy Krenzer gives pride of place to Chitul Finca El Tirol, a coffee sourced in the Coban region, Guatemala, known for having touches of honey and cocoa, perfect to bake with it.
This famous Cappuccino is made of a biscuit soaked in coffee syrup, topped with different layers of hazelnut praline and Chitul Finca El Tirol cream.
The whole is wrapped in milk chocolate almonds and topped with a rosetta-shaped milk chocolate disc that lets us see the white whipped coffee ganache and creates the illusion of a cup of cappuccino. A genuine trompe-l’oeil!
This lovely creation is available in Lenôtre stores in individual sizes (€7.90) or to share and serving 4 foodies (€28)!
